Course Description

Introduction to Vegetarianism

For those of you who have never lived a vegetarian diet, this course may be an ideal introduction!

Several theoretical considerations stand out in defining this alternative perspective. One of these concerns the treatment of the human body and animal life for biomedical purposes.

Another has been a perceived exploitation of nonhuman animals. Despite the institutional and philosophical resolutions of each, diet, which is of comparable prevalence and ethical impact, has not drawn a commensurate analysis.

Indeed, nutritional science has thrived and since the 19th century, has progressively solidified the conceptual distinction between human diet and other forms of nutrition.

This course does not extend vegetarianism to the dietary practices of nonhuman animals or draw a relativist dismissal of human uniqueness.

Instead, it shifts the boundary of nutritional research to include the diets of primates and human beings alongside other outlets of the human intellect to protect and enrich human life, rejecting the vegetarian ethic of irrationality previously upheld in philosophical and religious thought, in favour of an expanded view of dietary science as a creator of plant-based knowledge, or the botanical dietetics.

Vegetarianism is the practice of avoiding meat, including fish and poultry, and sometimes fresh dairy products and eggs as well as animal products such as rennet and gelatin.

Vegetarianism manifests in a variety of forms, all of which exceed the boundaries of meat avoidance. They include ovo-lacto vegetarianism, lacto vegetarianism, ovo vegetarianism, veganism, fruitarianism, and macrobiotic diets.

Modern vegetarianism has been properly understood as a plant-based diet, and contemporary vegetarian nutrition recognizes the scientific mediating role of select animal nutrients in neutralizing the adverse health effects of nutrient overabundance and yet facilitating proper bodily functioning in individuals with varying life spans and biological conditions.

Nutrition science no longer holds healthy colonic fermentation unique to herbivorous animals, but explains that the different lengths of the human gastrointestinal tracts are correlated with variations in the metabolism of the primary dietary source of energy and essential nutrients.
